N2 - The research titled " Application of quality management tools to reduce operating costs of a bakery in Trujillo city, 2024" aims to analyze how the implementation of quality tools can reduce costs in a bakery in Trujillo. It is proposed that these tools be applied efficiently to achieve this reduction. The exploratory and descriptive study was carried out through observation, consultation, interviews, and analysis of historical data from the selected company. The variables considered were the application and analysis of quality management tools. The results showed significant improvements in several aspects: addressing personnel shortages (improved Cpk of 0.56 and Z level of 1.51), machine maintenance (Cpk of 0.40 and Z level of 1.01), increased production space (Cpk of 0.52 and Z level of 1.24), and optimization of time control (Cpk of 0.77 and Z level of 2.25). These improvements led to a reduction in losses from S/.40,649.20 to S/.19,555.20. The economic/financial evaluation showed a positive NPV of S/.22,656.83, an IRR of 23.93%, a payback period of 7.3 years, and a B/C ratio of 2.90, indicating the proposal's viability. In conclusion, the correct application of quality tools such as QFD, FMEA, and DMAIC Six Sigma has proven to be effective in reducing operational costs in the bakery.
