Abstract

The main objective of this research is to evaluate the impact of a proposed improvement in operations management on the profitability of a potato processing plant, using industrial techniques to increase efficiency. The problem, objectives, hypotheses, and variables were identified, and tools such as the Muther method, line balancing, Solver, quality house, standardization, and time studies were employed. An Ishikawa diagram was also developed, highlighting the four factors with the greatest influence on the company's results. The proposed improvements included the application of industrial design tools, which optimized the allocation of freight to motorcycle taxi drivers for potato delivery, increasing profits from S/ 12,262 to S/ 16,119. Regarding operations management, the plant's profitability increased from 29.3% to 30.8%, all with an investment of S/ 33,887. The financial results include an NPV of S/ 10,837, an IRR of 74%, and a benefit-cost ratio of 1.72, which validates the viability of the proposal.
