N2 - The research aimed to analyze the implementation of improvements in the production line to reduce costs for the baking company using quality management tools. The study was quantitative and descriptive in nature, with a diagnostic and propositional design. An in-depth analysis of the company's current state was conducted using the Ishikawa diagram, successfully identifying the causes of a loss of S/. 68,803.69, which were: lack of training at the production station, lack of production control, lack of preventive maintenance, and lack of supervision of the oven temperature. To present the improvement proposal, the following engineering methodologies were utilized: Quality Function Deployment (QFD), Failure Mode and Effects Analysis (FMEA), and DMAIC-Six Sigma. These tools helped optimize the company's operational process, ensuring that the product was consistently manufactured while preventing errors and reducing high costs. As a result, a reduction of S/. 21,884.63 in the company's losses was achieved, along with an increase in Cpk values and Z-level in each of the indicators. Additionally, an economic/financial evaluation of the improvement proposal was conducted, resulting in a Net Present Value (NPV) of S/. 27,624.53, an Internal Rate of Return (IRR) of 86.49%, recovering the total investment in 2.1 years, concluding that the proposal was feasible.
