Abstract

The wine industry is one of the most important agricultural activities in the world. However, the activities of the transformation process (pisco, wine) generate large amounts of byproducts and waste, this is how it is estimated that the waste generated in the world production of grapes for winemaking reaches an approximate of 8.5 million tons per year. In this research, a similar context is evaluated, but on a smaller scale, specifically in the department of La Libertad in Peru, considered the third largest producer of grapes nationwide. The reuse of waste is also considered in order to extract bioactive compounds which have turned out to be excellent chemical reducing agents; For this, an extract in alcoholic solvent 96% rich in metabolites has been prepared for use as a reducing agent of the precursor silver nitrate, a process that has led to the obtaining of silver nanoparticles (NP Ag), this by reducing the ions. In this sense, the focus of this research is aimed at generating technology such as nanotechnology, and in this way giving it a better value, in turn laying the foundations to add this process within a circular economy.
